Fishmonger Cap'n Keith's Catch!

Guess who's bringing dinner to last several months. Cap'n Keith and his crew, that's who. Looks like we'll be good-to-go in the Mahimahi department here at Spit and Glue. They're coming up from Florida to help celebrate Sis' Birthday later this month.

I'm tempted to rattle off a few ways I like to prepare this beautiful, light white fish. But honestly, my favorite way is to lay it on a strong piece of foil, use dry seasonings to taste (maybe a dash of soy), and put it under the broiler for 2 minutes or so each side. Serve with white rice and a green salad, delish! Lucky for us Mahimahi populations are resilient to fishing since they grow quickly, spawn frequently, and have large ranges. Do you like Mahimahi, have any good recipes you can share? If so, leave it in the comment section. I'll try it and feature your recipe here on the page!
